1 teaspoon of cumin seeds
1 teaspoon of salt
1 teaspoon of sugar
1 liter of water
2 tablespoons of vegetable oil
Instructions:
1. Heat the vegetable oil in a pot over medium heat. Add the sliced shallots, minced garlic, and sliced red chillies and sauté until fragrant.
2. Add the coriander seeds and cumin seeds and continue to sauté until the spices release their aroma.
3. Add the chicken pieces and stir until all pieces are coated with the spice mixture.
4. Add the sliced lemongrass, torn kaffir lime leaves, torn turmeric leaf, and sliced galangal. Stir for a few minutes until fragrant.
5. Add the salt and sugar and stir until they dissolve.
6. Pour in the water and bring the mixture to a boil.
7. Reduce the heat to low and let the chicken simmer until the liquid is reduced by half.
8. Turn off the heat and let the chicken rest in the pot for at least 30 minutes to absorb the flavors.
9. Serve the chicken with steamed rice and vegetables.
